I made a foray into an unknown world today: I made gluten-free pizza!
And it was good. It took a bit more effort than regular pizza crusts, just because of the many ingredients needed, but it was just as good, if not better.
I wish I took photos.
My friend's child was recently diagnosed with Celiac disease, which is why I decided to try making something gluten-free. The four kids each got to make their own pizzas. They're such funny kids - they all LOVED olives. The adults made their own too, with plenty of caramelized onions and goat cheese. That's the joy of pizza - to each their own.
It was a fun and proud morning for this mama today.
